The Story
<p>After graduating high school, I attended Le Cordon Bleu culinary school, but my true passion for baking really blossomed while I was attending an all girls finishing school in Switzerland. We studied everything from Etiquette, French and European history to floral design and cooking, but baking was always my favorite part of the week. There was something about creating something beautiful and delicious with my own hands that completely captured me.</p><p>After finishing school, I returned to Mexico, got married, and opened my first cake shop in Mexico, Cake N’ More. My journey eventually took me to Chicago, where I had the opportunity to learn from some incredibly talented cake decorators at Wilton Industries. I became a cake decorating instructor there, and when I returned to Mexico, I continued teaching cake decorating while also making and selling my own cakes locally.</p>
Family, Recipes & Where It All Began
<p>Baking has always been deeply connected to my family, too. My grandmother on my dad’s side loved baking cookies for Christmas, and I was fortunate enough to keep many of her recipes and the things she taught me. Those recipes have stayed with me throughout the years, and some of those family traditions are still part of what I bake today.</p>
The First Birdie Bakery
<p>In 2012, after moving to McAllen Texas (2006), I opened Birdie Cakes & Bakery. At the time, my dream was to create a warm, cozy place where people could walk in and feel a little bit like they were at Grandma’s house, somewhere they could enjoy good food, homemade desserts, and something a little different every time they visited.</p><p>A few years later, I moved farther north and stepped away from the business to dedicate my time to being a full-time mom. But as much as I loved that chapter of my life, baking never really left me. It kept calling my name! <a target="_blank" rel="noopener noreferrer" href="https://fonts.gstatic.com/s/e/notoemoji/17.0/1f602/72.png">😂</a> So I eventually started baking from home again and slowly built a wonderful clientele throughout McKinney, Prosper, Celina, Melissa, Allen, and Anna Tx.</p>
A New Chapter in 2026
<p>And now, in 2026, Birdie has entered a completely new chapter.</p><p>This year I decided to step outside of my comfort zone and start participating in local farmers markets, where I introduced my Birdie GIANT Cookies and mini cakes. What started as me simply wanting to get back out there and share my baking has turned into something so much bigger and more meaningful than I expected.</p><p>I’ve had the absolute pleasure of meeting incredible people, making new friendships, and feeling so much love and support from the communities around me. Every market, every customer, every kind message, and every person who comes back for another cookie reminds me why I started baking in the first place.</p>
Looking Back at the Journey
<p>When I look back at my journey from studying in Switzerland, culinary school, living in Calgary Canada for few years, Mexico, Chicago and Wilton, my first bakery in McAllen, becoming a mom, stepping away, and eventually finding my way back to baking, I realize that Birdie has grown and changed right alongside me.</p><p>Birdie today is more than just a bakery. It’s a collection of all the places I’ve been, the people who have taught me, the recipes passed down through my family, and a passion that simply never went away.</p><p>And honestly, I’m just really happy to be baking again. <a target="_blank" rel="noopener noreferrer" href="https://fonts.gstatic.com/s/e/notoemoji/17.0/1fa77/72.png">🩷</a></p><p>Thank you, Locals of Texas, for this amazing opportunity to showcase my work right here in our local community!</p><p>I’m so grateful for the support, the exposure, and the opportunity to connect with so many wonderful people.</p><p>You guys are truly amazing!
